Just made this.
Ingredients
2 lbs boneless, skinless chicken thighs (6 pieces)
12 slices bacon
Preparation
Pre-heat oven to 350 degrees F. Grease an 8x8 baking pan (I use unsalted butter). Lay two strips of bacon flat and parallel. Place a chicken thigh at one end of the bacon and roll up so that bacon is wrapped around the outside. Place the construction in the baking pan and repeat for the other 5 pieces. Bake for 1 hour or until cooked.

Hey, if you wrap any food in bacon, I'll show up to the party! |

Glad to hear it! I think I would do these on a rack over a baking sheet next time so that the bacon gets crispy all around. There was a good bit of water left over in the bottom fo the pan that ran out of the chicken. Still fantastic though!
