Poach two small brains in salted water that has been acidified any way you please (lemon juice, wine, whatevah) for 5 minutes. Remove brains, drain, and chill in fridge until firm and cool.
In the mean time, whisk up 5-6 eggs and at least two blurps (sorry, I don't measure) of cream, along with whatever herbage you like, and season with s&p. Refrigerate this as well, if you're still waiting for the brains to cool.
Dice brains, and cook it in butter until browned. Reduce heat and add egg mixture, and stir everything lightly with a spatula until cooked. The result should be quite fluffy.
