I make these for my partner using puff pastry. For mine, I omit the pastry and it still tastes great.

You will need ramekins or individual pie plates for this recipe.

Dice bacon, cook for four minutes in the microwave with scrunched paper towel on top or fry if you want it crispier.

Place diced bacon in the bottom of the ramekin or pie plate with some of the fat. Crack two eggs on top leaving yolks intact. Sprinkle with salt and pepper. Bake in a preheated oven until eggs are set. I like my eggs still runny, but you can cook them until they are hard if you want.

Sometimes I sprinkle grated cheese on the top before putting them in the oven.
