This recipe couldn't be simpler, but it sounds so much more exotic with the Finnish name. It translates to "eggbutter." And that's exactly what it is:
- Hardboil eggs.
- Peel eggs.
- Crumble eggs.
- Soften butter.
- Mash butter and eggs together.
A ratio of one egg to one tablespoon of butter worked well for me. It has a texture just like egg salad. Recipes say to use it as a spread for various pastries. But why waste it on that? I ate it straight up with a spoon. I imagine it'd make a nice steak or chicken topper, though. And it's a good canvas for other flavors, if you'd like to play with seasonings.

I make something like this often! I didn't know it had a name! _________________ I'm a vegetable-eater by proxy. I make sure to get 5-10 servings of herbivore per day. |

Ok this sounds good! Are you supposed to mash it until it's smooth, or do you leave it lumpy like egg salad?
