1T butter or coconut oil
1T cream
1T cocoa powder
stevia to taste
1/2 t vanilla extract
1T nuts or dried coconut if desired
flavor extracts if desired (mint, almond, etc.)
Melt together butter or oil and cream. Whip in cocoa powder, stevia, and vanilla. Place optional nuts or coconut in cupcake papers and pour choc. over them. Place in the freezer until solid. Store in the freezer for long term. If it will be eaten within a few days you can store it in the fridge.
I make 8x batch and freeze it on a salad plate. When it is just solid I pry it up with a butter knife and break it into pieces. You could use wax paper on the plate to make the process easier. I always forget though.
I need to make another batch and see if it will work with double the coconut oil and no cream. Then it will almost be allowable on the meat and egg plan!
