2 lb. ground beef (not lean if possible)

4 green onions, chopped

1 green pepper, chopped

1 red pepper, chopped

1 medium can no-salt-added stewed tomatoes

12 oz. water

3 T. chili seasoning (the one I used, from Nantucket Offshore, http://nantucketoffshore.com/, has no salt or sugar added)

1 T. minced garlic

Brown beef in large pot. Add in peppers once beef is partially done. Add garlic. Allow to continue cooking. Add in tomatoes. Use can to add water. Add spice mix. Bring to a boil. Lower heat, and allow to simmer for 30 minutes to an hour.

The recipe is low sodium and delicious. You can certainly leave out most of the veggies, or use in more sparing amounts.
