2 pounds chicken breast, boneless/skinless -- 8 halves or pieces ( I use bone in skinlesss)
1 cup sliced mushrooms -- (or 2 cans)
1/3 cup sour cream
1/3 cup mayonnaise
2 tablespoons ranch-style dressing mix -- (Hidden Valley dry mix, about 1/2 pkt.)
2 tablespoons heavy cream -- (optional)
1/3 cup grated parmesan cheese
Place the thawed chicken breast halves in a single layer in a 9 x 13
baking dish. It's okay if they're still a little frozen.
Layer mushrooms over the chicken breasts, heaping them on each one.
Mix together the sour cream, mayonnaise, Hidden Valley dressing mix and
heavy cream. Spread dollops of this mixture over the top of the mushrooms.
Sprinkle grated cheese on top of the creamy layer. This is NOT a good
place to substitute shredded parmesan; the little pieces of cheese get
stringy and hard instead of crusty.
Bake at 375 until the top begins to get golden brown and crusty, about
45-60 minutes. Yields 8 servings, 1 piece of chicken plus topping/sauce.

3g Carbohydrate; trace Dietary Fiber; 68mg Cholesterol; 447mg Sodium.

Sounds Yummy. I love the Title. What is PPBBS? Is it obvious ?
I don't think I have ever had Hidden Valley Mix, so don't have a clue what flavor the Stuff will take. Like a ranch flavor? I do love creamy
I haven't had chicken, other than eggs, in such a long time. I've been eyeing the Walmart birds... thinking some chicken every few months isn't so bad... DOHHH!!!

Ha. I think it means Protein Power Bulletin Board S. Not sure though...
I love making this for company, because I can make it the night before, and put in fridge, then stick in oven when I get home from work, bake for 1 1/2, makes great impression on folks, who think it must have taken hours to prepare!
Okay, here is what I do:
I don't use Hidden Valley, obviously I don't consume sodium or MSG, ever. So I basically do this:
put skinless bone in chicken breasts in roasting pan. sprinkle on generously things like Basil, Oregano, Paprika powder, garlic powder, Italian seasoning, anything your heart desires. Then I mix the sour cream and mayo in a bowl and with a large spoon put in on the chicken breasts liberally. haven't been using the mushroom lately, most folks I cook for don't eat them, but I love them and they do taste delish on top, all brown and crusty. Then I sprinkle the parmesan stuff on top, use the green canister stuff, not imported, it just comes out better, almost like fried chicken, but better!
Another thing I do: I put some frozen veggie on the bottom, under the chicken sometimes, like broccoli, asparagus, etc. And it is so tasty, soaking up the flavors from the chicken and sauce, and while a bit over cooked, it's scrumptious.
