Slow-Cooked Pork Shoulder

"Pork shoulder is just a roast cut from a shoulder of pork. If you've ever had authentic Mexican food, it's what they make 'carnitas' from. It's very very highly marbled and can be tough if you cook it with a dry heat (the way you would a pork loin). I actually just put one on this morning before I left work - it was so easy it's ridiculous.

I just plopped the whole roast in my crock pot, sprinkled some spices over top (I used garlic powder, ancho chili powder and a bit of allspice for a kind of Jamaican flair, but you could use anything, even just salt and pepper) and then poured 1 cup of water in with it. Then I covered it with the lid and put it on low. Will take about 8 to 10 hours and what you get is that super-tender, fall-apart pulled pork texture. It is so good. I will eat this thing for days. It's great by itself, but you could shred up the meat with a fork, mix in a bit of hot sauce and serve with fried eggs (like huevos rancheros).

I've been using my crock pot more and more lately. That pork shoulder sounds awesome. What really sounds good to me right now is your idea on having it huevos rancheros style. Cool!
