Rissoles and EggIn Australia, we call 'burgers' (?) rissoles. These are easy and taste great.
1 kilo (2.2 lb) of beef mince (ground beef)
1 stalk spring onion finely chopped
2 tablespoons finely chopped parsley
1 teaspoon vegemite (yeast extract)
1 teaspoon beef stock powder
1 large egg
Mix all ingredients by hand, shape into rissoles. Refrigerate for 20 minutes, or longer if desired.
Pan fry until cooked. Transfer to a plate and keep warm. In the same pan (to save on dishes) fry eggs. Serve rissoles with a fried egg on top.
You will have a lot of rissoles left over that you can freeze or they keep pretty well in the fridge for lunches.
