Raw Bison LiverI am currently thawing out some bison liver. I am very leery to eat this raw. I am wondering two things. 1) How much should I eat? And 2) How should I prepare this to try and eat it raw? Lemon juice? Garlic? Some kind of marinade, or what? Any and all advice will be greatly appreciated! I have never eaten raw liver, but would like to try. One other thing. Does anyone think I should get some beef liver and not mess with bison, since it might have trich or something... or is that just in the muscle? HELP!

I don't know about trich.. but the Nourishing traditions book has you soaking organs like liver/KD in lemon before eating.

Well, I have some grassfed beef liver on a plate right now (from USWellness MEats) that is cut into nice strips. I'm just eating it plain and its the best tasting raw meat I've had so far. It actually has a very mellow sweet taste to me. I wonder how much is okay to eat in one day?
I'm eating quietly, DH is on his computer a few feet away. He's facing a different direction though. If he saw me eating this, he would probably puke.

what else have you ordered from US Wellness Meats? how was it? I've looked at their website but the minimum order is more that I wanted.

I think someone told me a compromise was to cut the liver into bite sized bits and freeze it 2 weeks (to kill the nasties.) Then just eat a few pieces each day.

Is it not safe to eat liver bleu? It has been prefrozen but maybe this is not good enough.
