pms pancakes

these are against the grain of this forum which tends to be whole foods, but there are certain times when it is necessary to choose the lesser of two evils.

Flavoured Protein powder (I have optimum nutrition, chose it because it had great quality reviews and was cheapest)
-mix protein with an egg until it's a thick goopy mixture
-pour onto a warm frying pan with a liberal amount of butter or coconut oil in it
-fry on low heat and flip, each side should be golden brown. If you keep the heat low, the sides will be deliciously crispy instead of poofy and spongy, when it's cooked leave it in the pan for a bit to soak up the rest of the fat. This adds to the crispy goodness.

No it's not a real pancake, but it's filling and sort of cheat like. And it's low carb.

I made this yesterday (yes, I had a slight transgression from no-dairy). It was really good! I used to make a version of this with ricotta cheese. It was just as good without the ricotta.
