Pizza Omelets

This is a great recipe for kids, and even for us adults, really.

3 eggs (could substitute 3 egg yolks or 1 whole egg and 2 yolks)
Several pepperoni slices
1/4 cup heavy whipping cream
grated mozzarella cheese
a small amount of tomato sauce (perhaps 1/4 cup)
pizza spices or Italian seasoning

Stir the whipping cream and eggs together until one color. Pour onto a hot skillet, heated over low-medium heat. Cover the omelet with one layer of pepperoni slices. When the omelet is nearly cooked, cover the pepperoni with mazzarella cheese. Once cheese has melted, add tomato sauce and spices. Fold the omelet over. Carefully slide it onto a plate and sprinkle a little more cheese on top.

Certainly, this recipe involves processed meat and dairy, and a little bit of carb, so this is definitely not something to have every day. But if you ever feel like having pizza, this might hit the spot and perhaps even prevent a slip-up. This could be especially good for people still in the transitional phases of going zero-carb.

MMMMmmm! Sounds so good. I would do mine without the tomato sauce, though, as I have bad reactions to tomatoes. Sounds very yummy, though.

Yes, I should have mentioned that. Thanks for bringing it up. I have had it without tomato sauce, and it is really good.

Another really yummy thing to try is mixing shredded cheddar cheese, sour cream, and chili powder together, and microwaving it until the cheese melts. Add this to eggs or ground beef, and it is really, really good. It has a taste reminiscent of enchiladas.

This sounds delicious, have you tried substituting tomato sauce for garlic butter?

I searched and here's one way to make it.

* 1 cup butter, softened
* 1 tablespoon minced garlic
* 1/4 cup grated Parmesan cheese
* 1 tablespoon garlic salt
* 1 teaspoon Italian seasoning
* 1/2 teaspoon ground black pepper
* 1/4 teaspoon ground paprika

DIRECTIONS

1. In a small bowl, combine softened butter, minced garlic and parmesan cheese. Season with garlic salt, Italian seasoning, pepper and paprika. Mix until smooth.
