Pickled Eggs

I figured that I'd make my first post to this forum a contribution... Basic though it may be.

I'll admit. I was resistant. But these are incredibly easy and really add a nice flavor to hard-boiled eggs.

It's beyond simple to make pickled eggs.

The way I do it is after I eat a jar of pickles, I save all of the juice and add in freshly made and peeled hard-boiled eggs. Make sure they're covered with the pickle juice and stick them in the fridge for about a week. Then eat 'em up.

I'd like to try making deviled eggs with them soon, but they're so good straight that I'm not as compelled to spice them up.

You can also make your own pickle juice, which is pretty simple, but I don't see the point as I eat about a jar of pickles every two weeks, so I don't know a good recipe. They are easy enough to find elsewhere if you're a purist.

This sounds yummy. So, I just went and looked in my fridge to see if I had any pickles. None. Nope. Rats.

How would I go about making pickle juice? Besides the obvious, which would be making pickles. Laugh

I think you still need the juice in the jar from the pickles... lol!

I wonder how it would taste if you soaked the hb eggs in the juice from those peppercini (sp?) yellow peppers?

Actually having made pickles, I can answer this! Laugh

To make pickle juice....vinegar and pickling spices...I think sugar is involved if it's sweet pickles. Duh. (Shouldn't think when covorting with Jack Daniels.)

Unless you want dill...then there would be dill herb involved with the vinegar.

Geeze, Susanne, if you really, really want to know...I'll dig out my pickle recipe and figure it out for you. Rreally, I will. Smile

Pickled Eggs

3 cups white vinegar
2 to 3 onions thin sliced
1 1/2 cups waters
6 to 8 hard boiled eggs
1 1/2 tsp salt
1 sprig dill
1/2 cup pickling spice tied in cloth bag
2 cloves garlic

I left out the onions and the dill. I used small eggs to get more into jar.
Peel eggs place in jar with onions slices alternating. mix remaining ingredients bring to boil. Cool. Pour over eggs. If not enough liquid add boiled water to fill (I just add more eggs). Let stand in fridge 4 days before using.

Dh loves these, I don't like any thing with vinegar.

I just had a thought
I saw canned quail eggs in our super store that would make nice snack size.
I guess asian stores would have them as well.

If you want pink eggs with bright yellow centers
use the juice from pickled beets.
cut in half they look real nice

Nope, don't like pickled beets or beets. Sounds pretty, though.

I just bought some bread 'n butter pickles make with Splenda. The brand name is Mt. Olive. They are very good. Gotta eat em fast to get the eggs in the juice. Of course I'm gonna add some jalapeno juice or crab boil to it to give the eggs some sweet heat.

Has anyone had any negative effects from the vinegar when eating large amounts of picked eggs?
