Oven “Fried” Chicken – 4 variations

Oven “Fried” Chicken – 4 variations Preheat oven to 350

Seasoned Pork Rind Coating (see below)
1/2 cup melted butter (or olive oil)
1 large chicken, cut up, or chicken pieces with or without skin

1. Mix together pork rind ingredients (see below) and place in small pie pan
2. Melt butter in the microwave and pour in another small pie pan
3. Coat a rack in a baking pan or a foil-lined baking pan with PAM
4. Dip the chicken pieces in the butter, then in the pork rind mixture and place on rack or baking pan
5. Leave the pan uncovered and bake for 55 to 60 minutes or until well-done.

Pork Rind Variations:
#1 – 1 cup ground pork rinds; 1/3 cup grated Parmesan or Romano cheese, or a combination of both; 1 Tblsp parsley; 1/2 to 1 tsp salt; 1/4 to 1/2 tsp pepper.
#2 – 1 cup ground pork rinds; 1 tsp. Summer Savory; 1/2 tsp. salt; 1/4 tsp. pepper
#3 – 1 cup ground pork rinds; 1 tsp. garlic powder; 1/2 tsp. salt; 1/4 tsp. pepper
#4 – 1 cup ground pork rinds; 1 tsp. paprika; 1/2 tsp. salt; 1/4 tsp. pepper
