meat muffins! (failsafe)

I'm a walking talking advert for my magic chef blender but here goes..

Cook up some leek, pork bellyfat (optional) and ground beef.  Blend in the blender with eggs and salt (I used 4 eggs) and pour into mini muffin tins.  I have silicone ones.  Bake on high heat.  That's it! They're fantastic, and the the next day are tasty out of the fridge.  THey really do have a muffiny texture so you can use them to eat with toppings, or butter or whatever.

I like the idea of making some egg quiche type thingies as muffins  Yup  And have wanted to buy those silicone trays.

Do you have to cook the meat before hand? Would it cook as the eggs cook?

It would probably cook as the eggs cook, but I did use a lot of meat in it and wanted to make sure it wasn't underdone, since it was supermarket ground beef.   I think the eggs would cook more quickly than the meat (THINK, don't know) so wanted to cook it first.   Also, as meat cooks it releases water, and that would make for watery muffins.. not yummy.  

I loooooooove my silicone trays.  I'm going to go out and buy more in other shapes. Food just pops right out of them and they clean up very easily (I throw mine in the dishwasher).

One reason I wanted to but a silicone tray was for freezing liver portions for my cat. They totally get stuck in regular plastic trays  Cry

I think I might try these tonight. I dunno - it's either this, or mince and tatties (!) since I have ground beef in the fridge. How much gr. beef do you use, Meg - like a pound (500 g)?

hm, like a cup of losely packed beef per 3 large eggs

I've been making these btw. and they have become a standby snack for me, the leeks are so damn good, the aroma just delicious and taste - mmmmhhhhhh!!!


I did get the silicone trays and haven't used them yet ... just found them when I moved, might have to make some this weekend.

If I'm too tired to grind the meat, I make it goulash style, or stew you could call it, in big pot, just leeks and pork or beef, sauteed.  Yum.

Great recipe idea, so flexible.

I can't live without my silicone bakeware.  Now, if I have to use anything that requires real scrubbing afterward, I'm tempted to not even bake in the first place.
