lemon cake - yess its eggsMake some lemon curd, basically lemon juice, butter, stevia and egg yolks warmed on low heat and mixed until it thickens. Refrigerate.
Whip the whites with a little cream of tartar until very stiff. In a separate bowl mix the curd with a few tbs of cream cheese (optional) and then gently fold it into the whipped whites. Bake for a long time until firm. refrigerate.
You can take it out before its firm and eat it as a pudding kind of thing. Mine is in the oven as we speak, don't know if I'll be able to be patient enough to make cake instead of just eating it.

I haven't made this cake yet, but reading this recipe reminded me of making lemon curd, which I love, so I just made a batch. It's sooo tart and yummy! I put extra butter in it, too, and it's so delicious. A little goes a long way. Smeared on a square of Atkins Revolution 'Cake' (which is the 'rolls' batter baked in a 8-inch pan) and topped with whipped cream is basically like eating a delicious scone.
I'm definitely going to try making this cake, though. How many eggs do you use? And how much butter?
