Lard IS elegant, isn't it? But I don't find it any more expensive than any other fat. Mind you, we've got access to a good farm, and just got a whole pig, but we'd render our own even without these resources. Lard is my main cooking fat, unless I use butter for taste reasons.
We were at dinner the other night, and the subject of lard came up. One guy said that hardly anyone uses lard anymore. When we told them that we use lard all the time, they thought we were kidding!
I don't joke when it comes to pig fat.

My cooking tastes so good and no one knows why.
The neighbours gave us a litre of duck fat yesterday! The woman is keeping it away from her poor husband who is plagued with heart problems. She's busy stuffing him with salads and rapeseed oil.

Duck fat is definitely the secret to deliciousness. Beef fat is also almost too yummy to be legal. Lard, I only like if it's from a good-tasting pig. I also like the tasteless variety that you can buy here in store (for cooking) as it has an incredibly high smoke point and doesn't impart a huge flavour if I'm not looking for something strong-tasting. But for homemade lard, sometimes you can get really piggy tasting pork and then I'm not so hot on the lard. But good lard is excellent.

I haven't had duck or goose fat yet, but we have a duck thawing out for tomorrow. Apparently duck is greasy, so I'll get an idea! I love beef fat, not so much pig fat. I've mostly been on butter instead of lard...if only my farmer had beef tallow. Butter so good, just eat it right off the knife...
