Hens

Has anyone ever cooked a small hen? I see them at the store and the price is nice..........

It seems like a good thing to have in the refridgerator to pick at.

Baking hen or frying hen?

I would assume baking, but I'm not sure now....

What's the difference between a baking and frying hen?

Baking hens are usually larger and a few weeks older but still tender, frying hens are younger, smaller, a bit more tender. Do not buy a stewing hen unless you plan to make soup or broth with it, they are the oldest and can be tough and stringy.
