Deviled Eggs

Deviled Eggs--Basic Recipe
This recipe makes 10 deviled eggs (20 halfs). Since I hate under-stuffed deviled eggs, I always cook 2 extra eggs. This takes care of 1 or even 2 that don't peel well. I add the whites of the 2 extra eggs to the yolk mixture. Run them over a cheese grater before adding to the yolks. This really increases the stuffing volume. I use a pastry cutter to chop/mash the yolks before putting the mayo and mustard in. If you put the mayo/mustard in before mashing the yolks, it is much messier/harder.

12 hard boiled eggs
1/3 cup Hellman's Mayo
2 Tbsp Silver Springs Chipotle Mustard

BACON DEVILED EGGS: Use the above basic recipe. To the yolk mixture, add 4 strips of thick-sliced bacon that has been well-cooked and minced. I use a mini-food processor to mince the bacon after cutting it in pieces. This works very well. I also add about 1 Tbsp of the bacon grease. This gives a lot of flavor and ups your fat intake.

SHRIMP DEVILED EGGS: Basic recipe and Cooked Minced Shrimp

CLASSIC DEVILED EGGS: 12 eggs, 1/3 cup Hellmans Mayo, 1 teaspoon paprika, 1 teaspoon dry mustard.

SPICY DEVILED EGGS: 12 eggs, 2 teaspoons dry mustard, 1 teaspoon Worcestershire sauce, 1 teaspoon hot-pepper sauce, 1/4 teaspoon celery salt, 1/4 cup butter, softened.

SPICY-ITALIAN DEVILED EGGS: 12 eggs, 2 tablespoons spicy-brown mustard, 2 tablespoons Italian salad dressing, 1/3 cup Hellmans Mayo, 1/2 teaspoon ground black pepper or to taste. Sprinkle finished eggs with paprika.

ZESTY DEVILED EGGS: 12 eggs, 1/3 cup Hellmans Mayo, 3 tablespoons finely chopped onion, 2 tablespoons dill-pickle relish, 2 tablespoon prepared horseradish, 1 tablespoon prepared mustard, salt and pepper to taste, paprika for garnish.

SOUTHWEST DEVILED EGGS: 12 eggs; 2 Tbsp Sour Cream; 1/4 cup Mayo; 2 Tbsp Spicy Salsa; 1 tsp Cumin; Some shredded cheddar and minced green onion can also be added, but are not necessary. They are very good without.


I must admit that my favorite is the Bacon recipe.

I'm too lazy to devil them.. I just throw the HB eggs in a bowl with mayo and spices and mash up with a fork, eat with a spoon.

I once tried a couple of slices of crispy crumbled bacon and melted lard mixed in with them and skipped the mayo - it was DELICIOUS. Maybe time to get some bacon again Smile

I think I might try this next time but I have to figure a way to limit the amount I eat somehow. Cooking fewer eggs might help...

My recipe:
12 eggs, boiled, peeled, cut in half, put yolks in a different bowl.
Add to yolks in bowl:
1 TBSP Vinegar
1 TSP or less Cayenne
1/2 Cup Mayo
1/2 Can flaked turkey
Mash everything until mushy, no big lumps.
Put back into the egg whites.
Eat until your stomach hurts.

You can add more or less of everything. I don't think there is any wrong way to make them.

Add 1/2 t. wasabi paste. Heaven.

Red...I love your idea of not even stuffing the eggs, just mixing and chowing down. I think I'll make some right now!!! Happy I love to cook, but any shortcuts are greatly appreciated. Thanks for everything.

now im jealous. they make me sleepy and sometimes even itch.

Carne, have you tried eating your eggs raw to see if you have the same effect?

You may have heard that some feel it's the 'cooking' that can create these problems.

yeah man*?*..i have

10 medium ones in black pepper with 2 capsules of fish oil
and sum *too many* combinations in-between.

its genetic. by my reckoning, anyways. e'en chicken dries out my skin.

theres this thing called anapsology *dunno if i got it rite* where they say u should only eat food that appeals to u in its raw form *u dont have to eat it raw tho*

apparently, thats one way to know u r cut out for it. they have sum other, weird ideas but this one got my attention.
