Compound Butters!!

Ok, for those of you not familiar with this wonder of life, a compound butter is just a flavoured butter.

1/2 lb. softened unsalted butter
1/2 tsp. good quality salt (optional)
The flavours of your choice (try 1/4 cup finely chopped leafy herbs, such as basil, tarragon, chives, flat-leaf parsley or sage, or 2 or 3 tbsp. finely chopped fragrant woody herbs, such as rosemary or thyme; 2 cloves minced garlic; 2 tbsp. dry red wine; 2 tsp. grated lemon zest; 3 or 4 soaked minced anchovies... the list goes on and on. You can do a mixture of all the above and multiple herbs, too.)

Stir together until everything is evenly distributed. If you're adding wine, it will take a bit of extra mixing to incorporate it, but it will mix in eventually. Plop onto a piece of parchment paper and use the parchment to roll up into a log. Refrigerate until firm. Melt thin slices onto hot steak or eggs or whatever you like! Yum.

Oh, you can also stir a finely grated or crumbled strong cheese in there, too, such as Stilton or Parmigiano Reggiano.

Here, the only compound butter available is plain old garlic butter for garlic bread in the green foil wrapper. It's really good, though, in a pinch! I've used it on steaks. Yup It's a wee bit salty, but if you under-salt the meat, then it's fine.

Oh and if you're a fruit eater and have some sort of control over yourself, you can mush up fresh berries and mix them with softened unsalted butter with just a pinch of salt. Smear generously onto a revolution roll or just slice and eat like the butter-fiend you are!!!!

Note: I do not do berry butter, as I could probably sit down with a spoon and a bowl and finish off an entire pound of it. Shock

I love the idea of lemon butter or orange butter => citrus butter. I will try that one.

What if you want something spicy, like chipotle butter? Is that possible? Like with the chipotle peppers in a can and chop them up fine?
