Cold Potatoes

Okay, I'm just thinking here and I'd appreciate any banter, no bashing or mashing required...

I just read this thingy:

Quote:
Cooling cooked potatoes forms resistant starch which is not digested in the small intestine and therefore does not increase blood glucose. The researches found the reduction in blood glucose in pre-cooked potatoes was much larger than could be explained by changes in the starch alone. They suggest the lowering of the glycemic index value was mostly due to the slower rate of digestion with pre-cooked potatoes.

Any ideas as to whether this could be true? Either way I find it interesting.

What I love about the internet is there's always something new to learn.

I love faux-tato salad made with cauliflower even better than with potatoes, it just adds a little something, something... Smile

Shit , I forgot about potato salad. You got me there. I was just thinking plain potatoes. Have you ever noticed that most carby/starchy foods taste awful by themselvs, so we end up making them taste better by adding fat? Potatoes, pasta, bread......
ReddyMcMeaty

Yes, I can't be bothered with pretty much any starch unless there is plenty of fat with it, too boring otherwise. I can have any sweet or bread or potato etc. in my house without a problem, as long as there isn't butter or lard to make it delicious.

Let's not forget the biggy, Mr.Salt Yup

Totally! Potatoes without salt are groddy. They are possibly the blandest food on earth.

Yes, potatoes need alot of help. Laugh Same with pasta. Would anybody even consider eating pasta without some kind of sauce on it?

Yes. My college roomate ate pasta just plain. That's it. No sauce. No cheese. No butter. She also made mashed potatoes from a box mix and did not even put butter or cream or anything with it. Very strange girl. I was always baffled by her eating habits. She said she liked the flavor and chewy texture of al dente pasta and that sauce would ruin it. She loved starch and would order fried and mashed potatoes and use the mash as a dip for the fries. No other sauce or salt. That was a meal.

We have a family recipe for a cold potato salad that is undercooked. They are diced up small and steamed. Toss with salt, lemon juice, olive oil and chopped parsely. Leave to sit for awhile. Maybe the lemon juice "cooks" them a little more. They were tasty but very firm and less starchy. Wow. I have not had potatoes in many years. I do miss them.

Having grown up eating the way I did, with the family I had, I can safely never eat another potato and still have had more than my share in my lifetime! Seriously - every. single. meal. I love them, but in a 'wasn't that nice?' kind of way, not a 'I want more' kind of way. I enjoyed them while they were in my life, but I'm done. Like an ex-boyfriend you had an amicable split with.

Whereas, I never stop craving fatty dairy things like ice cream, yogurt and cheese. Ever. They are really really hard to stay away from. Like a daily challenge. Actually, an hourly challenge. Laugh They are like the 'bad boy' I can't seem to stay away from. Love

My family was the same way growing up. Potatoes with every meal. They are cheap and filling.
