Coconut PuddingThis pudding is kick ass, especially if you're craving dairy. Since it does have carbs from the coconut milk, I limit to a small cupful for 'dessert', which is doable, since it's very satisfying. It has the exact taste and texture of vanilla pudding.
- 1 (500-mL) tetra pak of pure coconut milk without preservatives or 1 can (400 mL) of the lowest carb coconut milk you can find
- 11 egg yolks for the tetra pak (or only 9 yolks if you're using the can of coconut milk)
- 1 tsp. pure vanilla extract
- stevia, to taste
- In a heavy-bottomed saucepan or double boiler, heat coconut milk over medium heat until steaming. Meanwhile, in a medium bowl, whisk egg yolks with vanilla and a couple of drops of stevia. Pour some of the hot coconut milk into the egg yolks, whisking constantly. Pour the egg yolk mixture back into the pot and cook on a gentle heat, whisking constantly, just until the mixture is thick enough to thinly coat a spoon.
- Strain into individual custard cups or into a container. Cover surface of custard directly with waxed paper or plastic wrap (if you use plastic wrap - I don't) and refrigerate until cold and thick. Add additional stevia to taste, if necessary.
**If you've made custard before, you should have no trouble with this recipe. If you haven't, just be careful you don't overcook it or let it boil/simmer at all, or the eggs will curdle.

Okay, mine didn't get thick. Did I not cook it long enough? I was all paranoid about cooking it for too long, having never made custard before. Going to try again, bc it smelled AWESOME. I drank some, it was still pretty good

Yes, you probably undercooked it. When you dip a spoon in, the mixture should cling to the spoon and when you trace a line over the spoon with your finger, the line should hold its shape. I know - making custard for the first time is stressful! But yeah, it's good to drink, too! Like eggnog. Worst thing that happens is that the mixture curdles and you'll just have to strain it through a coffee filter and try again with fresh yolks. No biggie!
