Chicken Sashimi

Firstly, Hi all!
This is my first post and too much to tell here- except, I've read pretty much through the entire site the last few days and am very ecxited to be here! For many reasons I'll explain later.

Secondly, this isn't my idea, but i've eaten chicken this way a few times and really like it.

Take a chicken breast and dip in in boiling water for a few seconds to turn the outside nice and white and perhaps zap all the possible bacteria. Then slice the chicken in to thin pieces. It's really wonderful with the white outside and the pink inside. Dip in soy sauce with wasabi or as desired, just like sahimi!

I almost feel I know you all from your posts... or, do I Shock

oh that sounds great! I've had raw chicken but didn't think of it in a sashimi way mmmmm I can't wait!! I have some excellent ginger, soy sauce and wasabi hanging around.

Is searing the outside of the chicken sufficient in killing the necessary bacteria? I never worried too much about the safety of beef, but I thought poultry had to be cooked thoroughly for safety reasons. Does it depend on the cut or quality?

Yeah, the salmonella question looms. If you believe Aajonus V. the risk is mostly hyped. I honestly don't know, but when I heard that some Japanese Restaraunts serve chicken sashimi this way, I knew I had to try it.

I've been eating raw yolks for almost a year and so far so good... except if you google, the first thing you see are warnings, right Roll Eyes

And I believe I've read that if you are reasonably healthy, not too young or old, if you get salmonella it should pass without incident...

I'm curious if this WOE, meat, eggs etc. does improve our imune defences to these bacteria???
