Ceviche marinated Fish

It's been like forever that I've had any restaurant Ceviche (raw marinated fish). Last night I mixed some up made using Tilapia, and some heathen veggies. onion, cilantro and green pepper. Soaking in lemon juice overnight. The recipe recommended using lemon and limes, but limes are so expensive!

I loved it! The fish seudo-cooked up in the juice and it is now my second favorite way to eat fish, other than as sushi or sahimi. It amazes me how different fish tastes when cooked.

I've meant to try that for a long time! It sounds delicious! And yeah.. the marinating really makes a big difference. Raw poultry is disgusting to me but when you marinate it the texture becomes like a very tender cooked.
