blech, I hate how raw meat tastes when it gets old

Any ideas for strong sauces or something to cover up that gross taste? I know it's not BAD as in unhealthy, but it sure tastes unpleasant. I'm not about to waste meat in this country because of the expense so I generally choke it down..smothered in salt and spice.
