As close to Zero as I can Go - No more kefir!Okay. No more kefir for at least two weeks. This is my second day without it and I have a nasty headache. I'd like to get as close to zero carbs as possible. I have been reading the boards and the thread called Keto-Bliss. Do people actually get down to zero carbs consistently? Would that mean no eggs or organ meats? I know these probably sound like dopey questions.
I have been very low carb for years and extremely low carb for a few weeks eating mostly meat, animal fats (goat butter and lard) and raw eggs. I've cut back on the eggs. I have also been drinking a half a cup of my homemade goat milk kefir and some slices of head cheese (an organ meat sausage) and this is coming to about 10 grams a day total (not net) so not zero. I thought I was getting it pretty darn low at 10 grams or below until I read some of the posts here.
It's hard to give up the kefir. Otherwise I am quite disciplined. If I cut something out and I see or feel a benefit, I tend not to look back. I'd like to make a decision about the kefir so I have to experiment on myself. I'd also like to go through the ketosis and get keto-adapted. Right now my blood sugar and moods are so stable that it amazes me.
I'm going to try to go zero carb for the next two weeks or as close as I can get. No kefir. No head cheese.
Can I still eat eggs and liver? Any advice? I don't drink at all and I sometimes have less than a half a cup of black organic coffee in the morning.

That is pretty low. By cutting out the kefir, you'll be close enough to 0 carb without having to worry about limiting eggs, at all. I wouldn't eat organ meats every day, unless the portion is very small. Keep enjoying your head cheese, but only buy it in amounts that you can get through in a good amount of time while keeping portions reasonable. I'd say 5 grams of carb is a pretty realistic "zero", when you factor in eggs and your half-cup of coffee and love of offal.

Sounds like you already are keto-adapted, if you ask me. If you feel good and aren't lacking energy or having blood sugar swings, then you're probably already fat-adapted from being VLC for so long. I wouldn't worry too much about ketones at this point. Just keep eating meat, eggs, fat and limited dairy and a serving or two of organ meats once every few weeks and you'll be off to the races.

I only eat liver or head cheese once or twice a week and not in large amounts but I guess I was eating them too often. Maybe I'm still trying to make up for my past vegetarian daze. I'll cut back a little on the offal and keep my eggs.
I am feeling good with what I'm doing except for the kefir. I guess that's the main thing I know I should change but I've been putting it off. It is the high carb thing I've been ingesting and I also think it's sticking those last 10 pounds to me.
I am madly craving the kefir now so I'm a little cranky for the first time in months.
