Adapting to rawFor the past 20 days or so I've been ordering raw beef suet and raw lean from grass-fed cows. Beef suet had a cake-like texture and I really liked that, left a nice aftertaste. Even my brother likes it, who doesn't like raw or seared beef, but instead eats lots of chicken sausage that's loaded with spices and sugar. I ran out of beef suet a couple days ago and found to my surprise that I really enjoy beef fat now. I had some nicely marbled sheep from the farm and I enjoyed that 100%. Probably unrelated, but I also like raw ground beef now.
As far as lean goes, I think that raw jerky helped me a lot when I first got into carnivorous eating, but I think lean is easier to get used to, at least for someone who was fat deprived their whole life like me and just couldn't eat a piece of fat. Organs I've always preferred raw since I only recently started ordering, so I can't think of anything for them.
I really like eating this way now as all I need is a freezer, a cutting board and a knife. And well a plate to keep any juices from spilling when thawing which you can just soak into the meat again.
Well, hope that was helpful. Now, I get to see how this will work for my weightlifting. I'm already only sleeping 6 hours a day again, so I'm thinking this is going to work out pretty nicely!
