I have no idea what these mushroom are called in English but here is a pic
Wash them thoroughly
Fry them in butter until they're nicely golden browned, it takes a long time because when you first start to cook them they release a ton of water which must be boiled off before they start to really fry and get crispy. Be patient, it's worth it to cook them long enough.
Add a LOT of cream, and some salt and pepper.
That is it. You can top meat with it, eat it as it is, or if you're really bad eat it with potato dumplings, bread dumplings (commone here) or noodles. Seriously this stuff is amazing.

btw. they're really not oyster mushrooms, oysters are flabbier, these are quite firm and crumbly.
