I make "crackers' from cucumber slices.
Cut a cucumber into slices, top with your favourite toppings. I often do smoked salmon and a little bit of tasty (hard) cheese. You can do a whole range such as tuna salad, ham, curried egg etc.
This is a good entree or an appetizer at a dinner party and people do not neccessarily think it is low carb.
