For those of you who haven't completely written off dairy, I have found Parmesan cheese to be a godsend. I'm not talking about the fresh parmesan cheese, but the dry, grated kind that comes in a green canister. Of course, I buy mine in bulk at Sam's Club.

I use it instead of breadcrumbs in meatloaf and also in breading. It adds a delicious flavor. I haven't tried it yet, but I'm going to try making tuna and salmon patties using this as well. I'm also going to try making onion rings (for the kids) with this breading, and perhaps mushrooms. I'm also going to experiment to see if I can make mozzarella sticks with them.

Here is how I make my breading. This makes a wonderful breading. I used this to make turkey nuggets for my kids today out of leftover turkey. Of course, this would also make great chicken nuggets.

2 eggs
1/4 cup heavy whipping cream
Parmesan cheese

Stir the eggs and whipping cream together in a small bowl
Pour some parmesan cheese in a separate bowl

Dip your meat (or whatever you're breading) into the egg mixture to coat, then in the parmesan cheese.

I fried my turkey nuggets in lots of butter. They came out delicious. My kids loved them. Incidentally, I still feed my kids vegetables, so I also fried up some veggies with this breading.

Parmesan cheese has no carbs and two grams of protein per serving, 1.5 grams of fat (1 gram of saturated fat), and 15 out of 20 calories (75%) come from fat. Personally, I'm planning to give up cheese, but keep the dairy fats in my diet. I will probably consider Parmesan cheese a dairy fat, as the fat calories are much higher than the protein calories, and while parmesan cheese has 0 carbs per serving, sour cream and cream cheese both do contain carbs.

Anyway, I just thought I'd pass that info along.
