2 1/2 pounds pork shoulder
2 medium onions (medium dice)
2 garlic cloves (fine diced)
2 oz. lard or butter
1 quart beef or chicken broth
3 tablespoons Hungarian paprika
2 lb Sauerkraut
1 cup sour cream or crème fraiche
1 teaspoon pepper
1 teaspoon salt
1 teaspoon caraway seeds
1. Rinse and dry meat. Cut into 1-inch cubes.
2. Heat the lard or butter in a big pot and brown the meat. Add the onions and garlic and fry until they become translucent.
3. Add the paprika, broth, salt and pepper.
4. Drain and rinse Sauerkraut. Add to the meat. Mix well and simmer for 45 minutes on low heat covered.
5. Add the sour cream and stir into the Gulasch. Add the caraway seeds. Simmer for another 10 minutes.
