Summertime Lime Refresher
Recipe from Debra on candidasupport yahoo group

· 2 raw eggs

· 3 tablespoon Extra Virgin Coconut Oil

· 1 tablespoon organic butter

· juice of 1/2 lime

· stevia to taste

· 1/3 cup hot filtered water (just boiled)

· 2/3 cup cold filtered water (from the refrigerator)



Bee's suggestion: Blend egg yolks and coconut together first to help prevent coconut oil from hardening when cool water is added.



Then, add eggs whites, butter, lime juice and stevia. Start blender again and add 1/3 cup hot water. Blend for 1 minute then slowly add 2/3 cup cold filtered water. Pour into tall tea glass and enjoy!



I have found that if I do this quickly, it will have a nice little bit of froth on it, and I can drink it without it sticking to the glass.



If I blend it too long, once I add the cold water the coconut oil will get harder from the cold and the froth will stick to the glass, and I have to eat it with a spoon.

The sticking thing sounds annoying. I've had smoothies with coconut oil before so I can imagine it. I made some chocolate milk earlier with coconut cream (it's basically coconut oil with coconut solids in it) and butter, and didn't have any sticking issues even though I put ice in the blender at the end to cool it off. Do you think it's just because of the amount of oil you used? I bet the coconut and lime taste good together , can't wait to get some lime and try this out.. will be using bottled, not fresh. Too lazy.

What other combinations can we come up with that don't actually delve into the smoothie range due to added ingredients?

chocolate milk, both warm and cold
iced/hot latte, or chocolate coffee
creamy lemon - might be nice with gelatine added to make a pudding.

That is all I can think of.

Oh, that whole thing was just copied and pasted from the candidasupport group. I haven't made it myself yet....I plan to use ghee too instead of coconut oil. Will report soon.
