Grind 2-4 ounces of beef in food processor. Mix in 1/2 tsp red onion, tiny piece of garlic or sprinkle of garlic powder, sprinkle of salt, as much cayenne pepper as you can handle. Shape into bitesize balls and roll in grated parmasan cheese. Delicious!

bubba, if you're out there anywhere, I just wanted to tell you that I tried your meatballs the other day, and they were wonderful.

handful ground beef
finely chopped green onion
1 clove roasted garlic
salt
rolled in romano

You grind your own beef in a food processor, huh?  Where do you get the beef?  That's like the steak tartare my mother used to feed me when I was a little caveman.  I love it. I love raw foods.  But I'm afraid to eat it now.

Most of the time, I grind my own meat so that I can be assured of its quality.  I'm very suspicious of commercial ground meat, and think it's very likely to be swimming with nasties.  In the case of the meatballs though, I used a pre-ground meat, but it was from a whole cow we ordered, which was processed by the farmer in a facility that I know was clean because I was there.

The meatballs are a good place to start introducing raw meat.  With them all seasoned up (and you could take the seasonings in many directions), I'd bet most people couldn't even tell they were raw.

Sounds good, Carnation!  Unfortunately, it's a bit of a  hassle - but it would be crazy to eat pre-packaged supermarket ground beef raw, I think.
