I usually make this at work in the morning as I start at 6.30 am.

Take 3 eggs, a microwave proof container with a lid, whisk eggs in container, add a T of butter (or coconut oil or cream), whisk together, microwave with the lid just resting on the container for 1 min, stir, microwave on medium for another 30 seconds. I add tabasco for heat and sometimes pepper.

The above times all depend on your microwave wattage and such. It takes a little expermenting to get it to the right consistency.

This is a quick and easy breakfast that doesn't require a lot of effort.

Thanks, i'll give this a try. I've tried microwaving eggs in the past, and my mistake probably was I didn't add fat to them. Thx!
