What exactly is bad about processed meats?

I eat bacon every morning, but there there studies linking processed meats like bacon to cancer...

Nothing is wrong with them.  Yes, some people that eat bacon get cancer.  So they are linked.  But more people that eat bacon DON'T get cancer.  So maybe it is protective.  The big bugaboo is nitrates.  Your spit contains more nitrates than bacon does, best not to swallow, ever.  Celery, well that contains A LOT.  Hundreds of times more than bacon or any other processed meat.

There are other points of view though.  Such as those that feel that free amines and HCAs are a problem.  Personally, I don't buy it.  But that could be because they just don't bother me.  I don't live in their skin.  So, maybe it is a real problem that I'm just lucky enough not to have to deal with.  There are many that are VERY convinced though.

My opinion of processed meat has always been that it's like the candy or junk food of meat. Should you never ever allow yourself to have it? No, I think that's a bit extreme. I love a bacon breaky, once a month or so. But I would always choose fresh, unadulterated food over processed food, any day. Processing/curing/smoking meat produces amines and free glutamates which can be reactive highly reactive. Then there's the old nitrate/nitrite issue, which has been discussed above (and can also be reactive for people with food chemical intolerance, including the natural sources).

I know Barry Groves eats bacon for breakfast and a lot of people from the weston price foundation.

The bacon im getting is organic uncured.

I just found that 6oz of bacon and few raw egg yolks gives me tremendous energy in the gym.

I do react to amines and glutamates even though I poo poohed the idea.  LOL I resisted everything Adwred said initially actually and ended up finding out that I react to the entire host of food thingies.    Whatever, I still eat them sometimes...  sometimes many times...  but at least I know what and why is happening in my body.  Stuffy nose suddenly?  No it's not random, it was the meat I just ate that was cooked yesterday then stored in the fridge.    Warm ears?  A little flush on the cheeks?

I definitely have food allergies and reactions that are uncomfortable and obvious.  I think we just don't realize it until we don't ingest those things for a while.  Then it's like BAM - hits you between the eyes.  

I haven't had bacon in ages, nor anything processed much.  

MSG is the worst for me and it's well hidden in some processed food.  Confused

I think we all know it's best to TRY and not eat junk food- whether it's candy or meat-based. Whole foods RULE!

If you were to look at a time line of my hot dog consumption it would be flat line up until about 2 months ago when I went into a hot dog frenzy! Yes, buy one get one free helped. And once they were in the fridge or freezer I was at their command. UGH! I downed more dogs in the last 2 months than in 15 years I'll betcha... God, grant me the strength!!!

All bacon is cured.  "Uncured" typically means cured with celery juice.  Celery   contains TONS of nitrates.  If I recall, a pound of celery has the nitrates of around 500 pounds of hotdogs.

i'm not worried. i like bacon to much to give it up.

But i will email Barry Groves and ask him his take on it, since he eats bacon.

Technically our ancestors would have eaten large amounts of nitrates, a decent amount of there food was preserved or cured for winter. even Inuit would store food and ferment foods, would these foods contain MSG??

I am very highly reactive to amines, and that is why I stay away from processed meats, specifically smoked and cured meats.  Smoked meats are quite harsh on me, and I have cravings for them (a signal of sensitivity).  

Even just getting uncured bacon that has been smoked on my lips makes them peel and hurt (sort of like chapped lips), it's quite terrible.  That alone is enough to keep me away from smoked meats because of the outrageously high level of amines there.  Things like sardines are also highly reactive for me (usually headaches).  Not to mention the upset stomach and "D".

Amines...  Mad

I now consider myself a food-chemical super responder.
