Easy and guests think you are incredible

Portabello mushrooms
Bunch of watercress
Boullion or broth
Heavy Cream
Butter
an onion

Fry onions and mushroom in butter until cooked. Use lots of butter
Add watercress and fry for another minute or two
Put mixture in blender with 1 cup broth+blend
Return to put with another cup of broth and a lot of heavy cream.
Warm and serve

This sounds really good. It would be nice to serve to guests. Convenient too, because if you don't want to eat the veggies, you can just serve yourself the broth.
