This is an obvious one and variations of it are posted around, but I'm having one right now and it's so good, I have to talk about it.
2 cups ice cubes, or more, depending on how icy you like it
1 cup strong coffee, cooled to room temp
2 raw egg yolks
1 tablespoon 35% cream (optional)
stevia or sweetener to taste (optional)
splash of vanilla or other extract (optional)
In powerful blender, blend ice and coffee until slushy smooth - you can add a touch of water if your blender jams up a bit or if it's too thick and stops whirling. Add the rest of the ingredients and pulse until combined. Pour into tall glass and serve. Serve with a long spoon so you can stir it up as you're drinking it, as the crushed ice starts to float. Also, when you first start it, it's so thick you kind of need the spoon to eat it. This is so so so so good. Like one of those starbucks icy fattening coffee drinks. Obviously, the more cream you put in, the more delicious it is, but even without the cream, it's kickass.

I'm having one right this moment and it's sooooooo goooood. Refreshing doesn't even begin to describe it. And I've taken to using only 1 yolk so I don't go through my eggs so quickly (and no cream because I've run out) and it still so eerily creamy. I have no idea how it ends up so creamy with 1 yolk and no cream! I guess it's the air that gets beaten in from the blender?? SO GOOD! _________________ I'm a vegetable-eater by proxy.
