If I want to make curry chicken, can I just put a bunch of curry powder in some melted butter and spread it on some chicken quarters and bake it that way? I've only heard of curry that has the ??dairy based sauce to it, and I don't want to do that. I just want the curry taste.

Or if anybody has ideas for curry sauces, I'll take those, too.

Am I making sense. Bonkers

Yes that makes sense!

OK, yes, you can do just as you're describing with the butter and curry powder. Try to find a curry paste, though. The spices are in oil, usually in a jar, and are much fresher and have a better taste. You only need a small amount - maybe a tablespoon, depending on how spicy you want it vs. how many carbs you're willing to add. The way you're describing is probably the easiest way. If you can't find curry paste, just use the powder - it will still be great!

Or you can make a sauce, by sauteeing the curry paste in a tablespoon of butter or coconut oil for a minute over medium-high heat, just to toast the spices and bring their flavour out, and then add a can of coconut milk and a big squeeze of lime and some salt. Reduce until thickened. Then you can have a bowl of that on the side for dipping, which is incredibly delicious. Yup Oh, and if you like it, add a bit of chopped coriander (cilantro). Mmmm. Some people don't like coriander, though, so that's optional.

Ova, yes, that's the sauce I was thinking of. I never knew what it was made of. Dunno

I'm going to Chinatown later so I'll pick up the coconut milk and the curry sauce. Yup
