Credit to adwred for her professional expertise and guidance. Credit to barb0324 for suggesting soy sauce.

3/4 pound chicken breast or pork, sliced thin
Sesame oil
48 ounces chicken broth
1/4 cup soy sauce
1/4 cup white vinegar
1 1/2 teaspoons finely ground white pepper
3-4 dried shitake mushrooms
2 eggs, beaten, with about 2 tablespoons water
Sliced green onions

Put mushrooms in small bowl with hot water and let sit for 10 minutes. Squeeze out water and slice thinly. (I discarded the stems.)

Heat the sesame oil in a saute pan and lightly brown the meat.

In large pot, bring broth to a boil and add soy sauce and meat, simmer 10 minutes.

Add vinegar and white pepper, both to taste. Add a little at a time to get the hot/sour flavor you want. You can start with less and work your way up.

Add shitake mushrooms, simmer 10 minutes.

Beat the eggs with the water. Bring soup to medium boil, pour egg into soup in a THIN stream.

Wait 10-15 seconds, then stir slowly.

Reduce heat, add sliced green onions, serve. About 5 cups of soup.

OMG Scout a recipe!! I couldn't be more proud! Yup Actually now you're making me want to have H&S soup - maybe I should take a break from eggs and try this sometime this week. Grin

Eggy, I was thinking the same thing - couldn't you do this only with eggs and skip the meat? Using two eggs in this recipe made it REALLY eggy. I think if I make it again with meat I will drop it back to one egg. But two eggs is perfect if you don't use any meat at all.

You inspire me! I appreciate your input. It's so cool having a professional chef around here. Yup

As a trade, I could design a container ship for you if you want. It would be my pleasure! Yup The HMS Eggy?

YES! I've always wanted a container ship built in my honour! Woo Hoo Hazzah!

And you could definitely do this without meat, but I think I'm craving meat, which is why this sounds so good to me right now! But maybe I'll try sans meat first, then graduate to meat and see if there's a difference.
