I just came back from the asian market with a haul of yummy animal parts for so little money. I make a lot of stock throughout the winter. I like to drink a pint of it every morning. I make soups on a weekly basis, so I always need some on hand. If there's ever any leftover, I throw it in the freezer, but that doesn't happen too often. I'm just over the moon about all of the potential stock (and it's health-giving properties) awaiting me in the fridge right now.
Some people are really freaked out by this, but the key to a really great gelatinous stock is feet. Chicken feet, pig trotters, etc. They're very inexpensive and make the richest stock. Learned it from my gran, so it must be so. I also like to buy a piece of beef tendon to throw in my beef stock. It has a similar effect.
This has got me thinking about how being a carnivore is actually less expensive for me than eating SAD. When I ate a mixed diet, I would spend a lot of money on processed foods, and fruit and veg. It was inevitable that a good portion of the fruit and veg would rot, and thus be wasted. Now, every food product I buy gets eaten, the bones get made into stock, the extra fat gets used for cooking, the eggshells even go into compost. I realize this WOE could be very expensive if you had nothing but the best steak every night, but I've been surprised to find out how economical it is for me. Plus it's good knowing that every penny of food money goes to things that provide maximum nutrition.
