| Potatoes are way too high carb for me. A medium white potato is the equivilent of about 8 teaspoons of sugar, and will enter the bloodstream just as quickly. |

They are way too high carb for me as well. But were I inclined to carb up, potatoes would be my go to carb source. They are far and away the safest of the plants. The part below ground that is. The above ground part will kill you dead.
Besides, there is a local place that makes killer chili cheese fries.

Thanx Nicola! Wow, meat and potatoes or meat and pasta. Very very interesting.
I think like the cholesterol myth that many of us now are aware of, potatoes are not like the sugar you mention. I've tested my blood sugar several times now after potato meals and have not experienced what one might expect.
And I have to say, right or wrong, potatoes have helped me lose weight more easily than any other food I've eaten, except for Oatmeal as a close second. If your goal is to lose weight Potatoes are a God Send! I only found this out because nothing had been working and I took a chance.

Interesting. Then I wonder why they are relatively high on the glycemic index, since that is suppose to be based on how it affects blood sugar. |

You're very right! It is Interesting! It's very interesting. And that is exactly why I tested myself. Now, this was just me. But here's more info:

I believe potatoes have gotten a bad rap mostly because we tend to eat them after they have been abused in some way. Greasy, bagged with salt potato chips and such. And as with everything- there's always more to the story.
