I tried some bone marrow today. I can't say it was love at first bite but I'm going to try and get use to it as a replacement for dairy fats. I was wondering if anyone knew the fat/protein ratio for marrow though? I'm monitoring my protein levels. I pretty sure it's almost pure fat but the only info I can find is on caribou marrow (odd). I'm not sure this info is right though. Caribou marrow is supposedly 224 calories per ounce, with like 3 grams of protein or so. But other forms of pure fat, like butter or coconut only average 100-125 calories per ounce. Even nuts fall short of 200 usually?

Bone marrow is the fat I mostly consume. There are basically two types, one that is harder and white, the other yellowish, buttery and more liquidy, also usually more tasty. If I'm not mistaken, the lower leg should contain the tastier one, although I got used to the other sort and like it too. I would even say there are three types based on taste, perhaps four. Or maybe it's just my sense of taste changing depending on my hunger and bodily needs. Who knows?

I believe it is mostly monounsaturated fat with a little protein, about 6g per 100g.

Thanks for the replies, both were helpful. I found a caloric break down on one meat provider site. It listed a much higher protein level for marrow than I thought. It claimed marrow has 5.25 grams per ounce. I thought marrow was mostly fat, it sure looks like it.

From my experience, there's yellow/white(fattier) marrow, and red(bloodier) marrow. It depends on which bone you get it from and the aging of the animal.

I'm guessing you can't get straight up beef fat or suet/tallow for some reason?

I don't really know where to find suet other than ordering online (which is difficult because I'd have to go through my parents for that, who are starting to think I'm crazy). I have a harry's/whole foods market sorta near by which I really need to check. I can get beef fat from the grocery store if I ask. I got some for my cat to help her take her thyroid medicine. So I could probably render some beef fat. Marrow just seemed easier and less likely to freak out my parents (my mom already makes buys some for the dogs).

You must be an extremely determined person to attempt this diet while living with your parents. I salute your bravery!

If I were you, I would find a local meat market. They would probably give you lots of fat and maybe bones for free.

Lol...bravery...I guess you could call it that. The odd thing is that I live in a mostly rural area. There are pastures full of cows everywhere. I don't know what people do with them however. I haven't heard of any big meat markets around and the grocery doesn't have much in the way of grassfed. I guess the cows might be sold to bigger companies and finished off in feedlots?

Based on my experience, bloody marrow can either be white (the more solid marrow) or yellow (more liquid stuff). There also seems to be more of that blood stuff near the bottom of the lower leg. And when the animal is very lean, it's mostly blood and very little fat. I actually find the blood pretty tasty.  Happy

The closest thing I was able to find in the supermarket was frozen soup bones.  They were on sale, too.  I bought two packages.  What shall I do with them?  Make soup?

"Soup Bones: if you ask at the meat market for soup bones, you will get bones with meat attached and they are more expensive. Ask for bones for your dog, you'll probably get them for free or they will be very cheap. "
