OK, so who believes that blending or beating raw yolks denatures the protein? Should I be concerned about this, or do you think it's malarkey? I was just thinking of making a raw yolk smoothie, but then started to wonder about the blender and the protein and got all freaked out.

this is just my opinion - but I don't think it is a big deal... I would try to make sure to drink your smoothie immediately rather than letting it continue to oxidize... |

I really don't know. I mean.. it's going to get denatured in your stomach anyway right?
I've wondered that about the egg drinks too but so far have decided that the pleasure of an egg drink is far more important than keeping my yolks intact. I'd really like to know the real answer though.

Yeah, I've been having both whole-egg and just-yolk drinks lately, but honestly, I prefer the yolk-only ones. They just taste better. And what with the raw white being dubious, I think I'll stick to yolkies from this point forth. _________________ I'm a vegetable-eater by proxy. | Well count me in as wanting know also. You could just make the main smoothie, then mix the yolk in afterwards gently churning the delicious yellow swirl into whatever... What does denature actually mean? Maybe Meg is right, right? It all gets broken down, taken apart and reassembled anyway??? |

| I hadn't heard about denatured eggs either, but I've heard it's not good to break the yolk and cook it, like in scrambled eggs, if you're allergic to arachidonic acid. Is that what you're referring to? |

I think the real concern is oxidizing the cholesterol... I have heard certain MDs, the Eades and Dr. Rosedale expressing concern that cooking the yolks with exposure to the air oxidizes the cholesterol... did a quick web search and found:
"When cooking an egg, the cholesterol in the yolk is altered when simultaneously heated and exposed to air. Therefore, eggs should be cooked without breaking the yolks (i.e. poached, boiled, over easy, etc.), instead of scrambled or made into omelets. A raw blended egg should be drunk fairly quickly, or refrigerated, because leaving it out at room temperature will start cholesterol oxidation, albeit more slowly than by cooking."

I have another question about yolks. I'd also like to move to consuming mostly just yolks and really cut back on my raw whites, but I honestly do not have time throughout the day to separate the two, especially since I'm generally holding a baby in one arm while I'm in the kitchen. It wouldn't be bad (meaning wasting the good nutrition of the yolk) to separate a whole bunch in the morning and just use the yolks throughout the day would it? I'm planning on using them in blender drinks so I'd just put them in as needed and then consume immediately...obviously I'd do everything I could to make sure the yolks did not break when I separated them.
